Soda Bread
Ingredients | Method | ||
450g (1lb) strong wholemeal bread flour | 1. Set oven to 190deg C. | ||
5ml (1 teaspoonful) sugar | 2. Mix all dry ingredients. | ||
3ml (half a teaspoonful) salt | 3. Add water. Mix with a palette knife, then by hand. Work quickly. | ||
10ml (2 teaspoonfuls) cream of tartar | 4. Form into required shape - loaf or buns. | ||
375ml (14fl.oz.) water | 5. Bake for 30min (loaf), 20-25 min (buns). |
This is the basic recipe as given to us by one of the members of our local Ramblers group during a Wednesday walk. Thanks Chris! There are lots of possible variations. Chris likes to add some muesli. We add black olives and herbs and serve it as an accompaniment to pasta dishes. Cheese has been suggested but we haven't tried this. We have found that replacing some of the water (approx 1/3) with milk gives a softer bread. Try it and experiment - it's so quick to make!
