RECIPE OF THE MONTH

BOBOTIE
| INGREDIENTS | ||||
| 1kg minced beef | 1 medium onion - finely chopped | half a cup of raisins | ||
| half a cup of blanched almonds | 1 tablespoon of apricot jam | 15ml fruit chutney | ||
| 1 slice white bread | 10ml butter or oil | 3 eggs | ||
| 250ml milk | 25ml lemon juice | 2 teaspoons curry powder | ||
| 1 teaspoon turmeric | 2 bay leaves | 10ml salt | ||
| METHOD | ||||
| 1. Soak the bread in 125ml of milk, squeeze to remove the milk and mix the bread with the minced beef. | ||||
| 2. Mix in all the other ingredients except the oil, milk, eggs and leaves. | ||||
| 3. Melt butter or oil in a frying pan and brown the meat mixture lightly. Turn it out into a casserole. | ||||
| 4. Beat the eggs and the rest of the milk together and pour over the meat. Garnish with the leaves. | ||||
| 5. Bake in the oven at 180degrees until set - approx 50minutes | ||||
| This is a recipe that we brought back from South Africa. Our friend Maggie made it for us and we have made it a few times since our return. These quantities serve eight. The meat mixture can be frozen at the end of step 3. | ||||
| Maggie served it with rice and vegetables. We served it with rice, chutney, bananas, tomatoes, cucumber, coconut and sliced hard-boiled eggs. | ||||
