Passion Cake

| CAKE | ICING | |||
| 7oz Vegetable oil | 7oz full fat soft cheese | |||
| 7oz Grated carrot | 3.5oz Icing Sugar | |||
| 6oz Sugar | 3.5oz Margarine | |||
| 2 Eggs | ||||
| 3oz Nib Walnuts | ||||
| 6oz wholemeal self-raising flour | ||||
| 2oz self-raising flour | ||||
| Dash of cinnamon | ||||
METHOD |

| 1. In a large bowl blend together oil, carrots, sugar, eggs, chopped walnuts, flour and cinnamon | ||||
| 2. Divide the mixture between two 7" cake tins and bake for 35min at 180degrees C. | ||||
| 3. Cool before turning out | ||||
| 4.Whisk together the ingredients for the icing and use to sandwich cake halves and ice top and sides | ||||
This is one of Ted's recipes which has always been a firm favourite with family and friends.
