Passion Cake

INGREDIENTS
CAKE     ICING  
7oz Vegetable oil     7oz full fat soft cheese  
7oz Grated carrot     3.5oz Icing Sugar  
6oz Sugar     3.5oz Margarine  
2 Eggs        
3oz Nib Walnuts        
6oz wholemeal self-raising flour        
2oz self-raising flour        
Dash of cinnamon        

METHOD

1. In a large bowl blend together oil, carrots, sugar, eggs, chopped walnuts, flour and cinnamon
2. Divide the mixture between two 7" cake tins and bake for 35min at 180degrees C.
3. Cool before turning out
4.Whisk together the ingredients for the icing and use to sandwich cake halves and ice top and sides

This is one of Ted's recipes which has always been a firm favourite with family and friends.
