In the syrup dip 2 forks back to back (or a whisk which the extremity has been cut). Raise the forks on top of the rolling pin and with rapid movement of back and forth, swirl the filaments of sugar. When finished, roll the angel hair on themselves.
Brush oil on the back of a ladle. Dip your fork or whisk in the syrup. With a rapid movement of back and forth, swirl the filaments of sugar. Repeat the operation until you obtain the desired volume.
Note: To obtain fine filaments, the fork have to be high above the rolling pin. Remove the cage from the ladle.
