Straw sugar


Basket         As we already mentioned, straw sugar does not preserve well but produce spectacular effects on pastry.




Basic recipe


500g cube sugar
125 g glucose
200 ml water
165°C (temperature of syrup)

- In a pot, add sugar and water. Bring to boil and add the glucose. During the cooking period, never stir the mixture to avoid crystallization. When you reach 165°C, immerse the pot in cool water and make sure that no water falls inside. Remove and let stand from 2 to 3 minutes. To obtain beautiful filaments, the temperature of the sugar must reduce.






Angel hair

In the syrup dip 2 forks back to back (or a whisk which the extremity has been cut). Raise the forks on top of the rolling pin and with rapid movement of back and forth, swirl the filaments of sugar. When finished, roll the angel hair on themselves.


How to make a cage

Brush oil on the back of a ladle. Dip your fork or whisk in the syrup. With a rapid movement of back and forth, swirl the filaments of sugar. Repeat the operation until you obtain the desired volume.
Note: To obtain fine filaments, the fork have to be high above the rolling pin. Remove the cage from the ladle.
