Panini are simply sandwiches, Italian style.
1 Medium Red Bell Pepper 1 TBL Balsamic Vinegar 1 Sprig Fresh Rosemary (or 1/2 tsp dried) 8 oz Thinly sliced smoked turkey 8 large Basil Leaves 4 2oz Whole-wheat hard rolls, split
Spray broiler rack with nonstick cooking spray; preheat broiler. Broil pepper, turning occasionally, until charred on all sides, 10-15 minutes; place in sealable plastic bag, seal and set aside 15 minutes to steam. Peel, core, seed and slice into thin strips.
In quart-size sealable plastic bag, combine vinegar, 1 tablespoon water and the rosemary; add pepper. Seal, squeezing out air; tyrn to coat pepper. Refrigerate 8 hours or overnight, turning bag occasionally. Brain and discard marinade.
TO assemble sandwiches, layer 2 oz turkey, one fourth of the red pepper strips and 2 basil leaves onto each roll.
