Our bodily fluids are made up of about 50 per cent water with about 0.9 per cent of mineral salts dissolved in it. Ideally, this level must be kept constant in order to keep all our body functions running smoothly. If we enjoy more than one pint of beer we add a large amount of water (sorry for the bad news, but yes, most of it is water) but no trace of salt. What our bodies really need is an extra supply of salt and that is why we crave peanuts, crisps and pretzel sticks--not because of hunger for proteins but in order to get the extra dose of vital salt.

Your hungry beer drinker is experiencing an outpouring of insulin stimulated by the carbohydrate ethanol carried in the beer. Insulin causes hypoglycaemia, a reduction of sugar in the blood, which in turn stimulates the sensation of hunger. He doesn't feel like an apple because fruit is acidic, like the beer he is drinking. Just as acidic wine goes with alkaline cheese but not with acidic grapes after dinner, beer goes better with stodgy, alkaline chips. Watch out for the vinegar, however.

What mechanism (if any) causes extra drunkenness when drinks are mixed?

There is no real reason that alcohol will affect anyone more or less because drink mixing--it is all ethanol after all. Different concentrations of alcohol are absorbed into your system at different rates which can lead to confusion, as can the different number of alcohol units present in various drinks. It is probably a combination of these factors which makes people mixing drinks seem more inebriated.

This is a myth. Your blood alcohol level depends solely on the amount of alcohol you have consumed. At parties most people stick to one kind of drink to begin with. It is only when they have consumed enough alcohol for their judgment to become affected that they decide to experiment with other, possibly higher alcohol drinks. By this time they have probably lost count of their intake so the following morning's hangover is blamed on the spectrum of drinks rather than the quantity.
