  Campfire Eclair
Preparation Method: Can be cooked over an open fire or charcoal.
Serves: 10 - 20
Non-Food Items Needed: Sticks, Broom sticks or 1/2 -3/4 inch doweling.
Heavy Duty aluminum foil.
Ziploc Bags
Food Items Needed: 2 cans refrigerator biscuits
1 large. pkg. instant chocolate pudding
1 lr. pkg. instant vanilla pudding
Milk for pudding
whipped cream
At Home Prep: None
In Camp Prep/
Cooking Instructions:
First, make puddings inside Ziploc bags using slightly less milk than called for. (Girls can play catch with double bagged pudding to mix). Set aside.

Make a doughboy by wrapping 1 or 2 uncooked biscuits carefully around a foil covered end of a stick or dowel. Make sure there are no seams or holes. (We use two for the *large* version ; ) ).

Cook SLOWLY over fire until golden brown. Biscuit will slip off foil when done.
Serving Suggestions: Snip the corner of each pudding bag with scissors and squeeze first vanilla and then chocolate pudding into the doughboy. Top with whipped cream. YUM !!!
Comments: **Younger girls do not have the patience required to cook doughboys slowly and should stick to marshmallows.

Hint: a larger diameter stick will hold more pudding !! ; )

  Cobbler
Preparation Method: Dutch Oven and coals
Serves: 10-15, depending on how hungry and never any left over
Non-Food Items Needed: Dutch Oven
Charcoal
Food Items Needed: 2 boxes yellow cake mix
2 large (30 oz.) cans of fruit -- do not drain! (see note below)
1 stick of margarine
At Home Prep: None
In Camp Prep/
Cooking Instructions:
Melt margarine in bottom of Dutch Oven (you can line it with foil beforehand if you like, but my husband's motto is "real Scouts don't line their Dutch Ovens "). Put in one of the cake mixes and the fruit, and stir. Add the other cake mix on top of the mixture--do not stir. Set on coals and place coals on top to cook. Bake for 20-30 minutes.
Serving Suggestions: Serve straight from dutch oven, until it is totally gone.
Comments: You can use two cans of the same fruit or two different fruits, and one can be a pie filling if desired. Variations we have tried have included: peach, peach-raspberry, peach-strawberry, and apple-pineapple-cherry. The cake mix on top makes a delicious crumb-type crust. It is rich and delicious.

Note on Clean-up: When my hubby, the "non-liner, " cleans up, he scrapes out the leftover food with a paint scraper, then puts the dutch oven back over and under the coals. The mess gets "burnt clean. " Then he just wipes it out with a greased paper towel and it's ready to put away. It takes a lot longer than just lining it, but I think he gets a kick out of sitting next to his dutch oven and watching the coals.
