Comments: Heat a skillet with two tablespoons of olive oil. Cut 2 1/4 inch skinned slices of eggplant. Cut a slice of really nice red onion, tomato, two or three slices of red pepper, each 1/8 inch thick. Then toss 'em in the frying pan too for a minute or two. You want the eggplant softened. When it is, toss it on the grill for 2 minutes (toaster oven will be fine) each side at medium heat. Cheeeeez. mmm. Fontina's best, but Pepper jack or Mozarella will do. Gingerly (its slippery) place eggplant on spicy mustard covered challah, then top with above listed items. Let cheese melt ever so drippingly and when the entire thing is oozing with wafting, melodious scents, serve with chips and a glass of seltzer water...

Comments: Toast bread. Spread with light layer of mayo. Drain sundried tomatoes and marinated artichoke hearts. Place on bread, top with cheese. Broil until cheese is bubbly. Yum, yum...eat 'em up.

Comments: Peel, core and slice thin one green apple. Lather pesto on sourdough, add one layer sliced apple. Cover with provolone and another slice of bread. Grill like grilled cheese. Even better done on Weber grill.

Comments: Mix all ingredients together. Season to taste. Add a little lemon juice. Cut pitas in half, and fill with salad. Great for leftover turkey at Thanksgiving time. Enjoy.
