Learningquest's Chicken and Dumplings
1-2 large cans of chickn broth. (more broth makes this more like a soup)
3-6 chicken pieces
Bring broth and chicken parts to boil and simmer until chicken is cooked through.
While that is happening, prepare the dumpling noodles:
4-5 cups of flour 4 large eggs
1 tsp. baking powder 1 tsp. salt
Milk
Mix flour, salt and baking powder. Make a well and add eggs to center. Mix, adding flour to eggs...make a dough...add milk as it gets dry and mix up all the flour mixture. then separate into two sections. Let it sit and 'rest' for 1/2 hour or so. Roll dough to about 1/4" - 1/2" thick then cut into slices as long as you want. Learningquest slices the dough into thirds or qarters, and then slices up individual dumplings. You'll need to flour area where you roll so dumplings noodles don't stick to counter top.
Remove chicken parts from broth, add dumplings to chicken broth, and simmer. Remove chicken meat from bones and add ot broth and dumplings. Continue to summer. This can make its own gravy if there is enough excess flour on rolled out dumplings. Again it depends on your taste preferences.
This is definately a do it and see what you like recipe. Learn's family prefers less broth so it comes out like a gravy.
