Green Beans
1 lb. fresh green beans, cleaned & trimmed
1 large onion, thinly sliced
6 roma tomatoes, diced
1/2 c. vegetable oil
salt & pepper to taste
Snap beans in half. Place in saucepan. Add all other ingredients and mix. Cover and simmer over         low heat for 30-40 minutes or until beans are tender. Serve hot.
Garlic Potatoes
2 large potatoes, peeled and cubed
4 cloves garlic, minced
1 c. oil for frying
2 T. ghee
2 T. parsley
salt and pepper to taste
Fry potatoes until tender, drain thoroughly. In skillet, melt butter and add garlic, fry gently for 2 minutes, add potatoes and parsley, salt and pepper. Heat through.
