1 lb. fresh green beans, cleaned & trimmed |

1 large onion, thinly sliced |

6 roma tomatoes, diced |

1/2 c. vegetable oil |

Snap beans in half. Place in saucepan. Add all other ingredients and mix. Cover and simmer over low heat for 30-40 minutes or until beans are tender. Serve hot. |

Garlic Potatoes |

2 large potatoes, peeled and cubed |
|
|
|
4 cloves garlic, minced |
|
|
|
1 c. oil for frying |
|
|
|
2 T. ghee |
|
|
|
2 T. parsley |
|
|
|
salt and pepper to taste |
|
|
|
Fry potatoes until tender, drain thoroughly. In skillet, melt butter and add garlic, fry gently for 2 minutes, add potatoes and parsley, salt and pepper. Heat through. |
