Cherished Family Recipes

These are just a few of the wonderful recipes passed down through generations of my family. I hope that your family will enjoy them as much as we do ... if you try them, let me know what you think!

Meatloaf a la Mocha

This recipe has been with us forever! There's nothing like coming home to this after a long day sledding. And of course kids just eat it up, not to mention chocaholics! And who isn't a chocaholic at heart? Be sure to try it with the vanilla custard sauce.

You'll Need2 lb ground beef, or a mixture of beef and pork
1/2 cup breadcrumbs
1 egg
1/2 cup swiss-process cocoa
1 cup semi-sweet chocolate pieces OR
1/2 cup chocolate pieces and 1/2 cup chopped pecans
1 1/2 tsp vanilla

Cockadoodles

Everyone loves snickerdoodles, those cinnamon-and-sugary butter delights! This recipe takes the "spice" theme one step further by adding a secret ingredient: Sriricha sauce. This not only cuts down on the fat but adds a wonderful rosy glow to the cookies (and anyone who eats them too!). You can find this bright-red sauce in the ethnic foods section of your supermarket. Look for the bottle with the happy crowing rooster on the front (get it, "cockadoodles?").

You'll Need 1 cup butter or margarine, unsalted
1 1/2 cups white sugar
1 egg
1/4 cup Sriricha sauce
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup sugar plus 1 tablespoon ground pasilla chile
  
FirstCream butter and sugar until fluffy. Add eggs, beating one at a time, after each addition.
NextSift together the flour, cream of tartar, baking soda and salt. Slowly add to the butter mixture and mix well.
ThenWrap dough in plastic and refrigerate for 1 hour.
MeanwhilePreheat oven to 400 degrees F.
FinallyMix together 1/4 cup and 1 tablespoon of ground cinnamon in shallow bowl. Roll 1 inch balls of dough into mixture and place 2 inches apart on cookie sheets. Bake 8 to 10 minutes until lightly browned.


Liz insisted that I point out I've never actually cooked any of these dishes.
