THIS WEEKS HEALTHY LIVING RECIPE IS:

Parmesan Cheese Bread


Yes this is low fat!

Ingredients
1/2 cup reconstituted butter-flavored mix
2/3 cup Parmesan cheese
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon snipped fresh Italian parsley
1 teaspoon garlic powder
1 loaf of frozen dough, thawed

Directions
Place the butter mix in a small bowl. In another small bowl,
combine the cheese, basil, oregano, parsley and garlic powder.
Form 12 cherry tomato-size balls from the dough. Dip each
ball into the butter mix, then in the cheese-spice mixture. Coat
a bundt pan with nonstick spray. Arrange the balls side by side
in the pan and cover the pan with a damp towel. Heat the oven
to 150 degrees and turn it off. Place the dough in the oven and
let it rise until doubled, about 1 hour. Remove the dough from
the oven. Heat the oven to 350 degrees and bake the bread
until it is done and golden brown, 20 to 25 minutes.

Makes 1 loaf (12 slices)..
Approx. 120 calories per serving

Italian Chicken Parmesan

Ingredients:


4 Tablespoons Italian Style Bread crumbs
4 Tablespoons shredded fresh parmesan cheese
1/2 teaspoon oregano (or italian herb seasoning)
2 Tablespoons lemon juice
2 small cloves of garlic-minced
4 boneless skinless chicken breast halves
vegetable cooking spray

Preheat oven to 425 degrees.

1. Line a cookie sheet with aluminum foil and spry with vegetable spray.
2. Combine first three ingredients in a shallow bowl and mix well.
3. Mix lemon juice and garlic together in a small bowl.
4. Dip chicken in lemon juice mixture and then in bread crumb mixture
5. Place chicken on foil covered cookie sheet and spray lightly with vegetable spray.
6. Bake for 20 to 25 minutes or until chicken is tender and juices run clear.

Makes 4 servings
approx. 210 calories per serving
exchange= 1/2 starch, 4 lean meat, 1/2 fat
