Recipes from Jamie's Kitchen

My kids, all 7 are growing up and I have finally discovered that I enjoy having family dinners with matching plates and silverware. This was not a priority as I was chasing my little kids trying to get them to sit down to eat! By the time I pinched pennies to feed our family I guess it never crossed my mind to splurge on pretty plates or expensive linen napkins. But now that I am a grandmother, and my children are the ones chasing their kids and our youngest child is 9 years old and a big helper, I find that have time and enjoy having a pretty table with serving dishes as pretty as the food is pleasing to the eye.

It started last Christmas, 1999 when we bought an 8 place setting at a grocery store sale, with glasses to match. By the next Thanksgiving I only had 1 glass left so I had to buy a new set of glasses so the table would match. I wanted to buy linen napkins but they were $4 and up, so I settled for 99 cent washcloths with a harvest angel. I bought some green pipe cleaners for 59 cents and some leafs on sale to make my own napkin rings. When I went to set the table I did not have a matching 8 place setting of any of our many dish settings. Before Christmas I stumbled across a Christmas Sale - I bought an 8 place setting of special Christmas Dinnerware and an 8 place setting of Blue Snowmen Dinnerware for the kids table. Then I bought linen napkins for both tables. I could not find napkin rings so I bought wooden napkin rings to make my own. After I painted them I covered them with white ribbon that was etched in gold. The napkins were hard to slide into the rings so I have since bought 8 golden napkin rings... which I am very proud to have in my collection. I even asked for a complete gold tableware set for Christmas, which I used for our Christmas Dinner. I found glasses with a gold edge on top. The tables were beautiful, and even the younger kids and grandkids felt that their tables were great! Click to see our Christmas Dinner Menu. or New Years Meal.

Now that the special holiday tableware is put up for next year, all of this has left me realizing that I really enjoy having a beautiful table set for my family, especially for special meals. But I never shopped for special plates, or even looked to see what I really like. So I decided to start window shopping just to discover what I like. As I was looking I remembered feeling like Julia Roberts in Runaway Bride when she was trying all those different types of eggs just to discover what she really likes HERSELF! So here is what I am discovering...
I love pink roses, especially one rose on a plate. I have 7 plates left of a single pink rose on beige. I bought these a long time ago at a grocery store special where you buy one a week. This is where I have bought most of my dinnerware. I wish I could find another plate to match or a simular pattern. I found some pink rose napkin rings that look great with red wine colored napkins. I also love the color of my new blue glasses. I also like gold accents on a table.

When I found this recipe,
I thought it was perfect for
people, like me, who just are
not sure how to tell when poultry
is thoroughly cooked, but not dried out.
Give this a try.

BAKED STUFFED CHICKEN

6-7 lb. chicken
1 cup melted butter
1 cup stuffing (Pepperidge Farm is good.)
1 cup uncooked popcorn (ORVILLE REDENBACHER'S LOW FAT)
Salt/pepper to taste

Preheat oven to 350 degrees.
Brush chicken well with melted butter,
salt, and pepper.
Fill cavity with stuffing and popcorn.

Place in baking pan with the neck end toward the back of the oven.
Listen for the popping sounds.

When the chicken's ass blows
the oven door open and the chicken
flies across the room,
it is done.
