Mountain Recipe: Cornbread Pancakes (folklore)

This is a recipe which was passed down to me from Mom. It was a recipe used by her family. Cornbread Pancakes Mix together: 2 cups of white cornmeal 1/2 cup of flour 1 tablespoon of baking powder 1 - 2 tablespoons of oil or melted shortening 1 egg enough milk to wet down dry ingredients (about 1/2 to 3/4 cups) a dash of salt Preheat cast iron skillet, adding about a tablespoon of shortening to the skillet to prevent sticking. Mix all ingredients together well. When skillet is hot, measure out two or three tablespoons of cornbread mixture for each cornbread pancake. Brown on one side before flipping the pancakes over. [These are especially good crumbled up into a glass of milk.] NOTE: The measurements are sort of 'guessed' ... everything is added according to preferences and tastes.
