Use
500 g of beef and several beef bones to make a soup.Then take 4 onions,
4 carrots, leek, celery, 3 sliced red beets and fry it all together,
and add salt, pepper,bay leaf, 2 cloves, some blueberries and coriander. |
When
the soup is cooked, strain it through a sieve and add 1/3 litre of
red beef juice.Then season it with red wine, lemon juice, salt and
pepper. |
Meat
from the soup should be minced and fried on butter along with some
dried, sliced mushrooms.Then prepare dough, roll it out, cut it into
small square pieces, fill it with the stuffing, join the sides together,
smear a white egg over it and press the edges together. |
Cool
it 5-7 minutes in salt water and add it to the hot soup. |

ROASTED
PLUMS WITH BACON |
Pull
the plum stones out, put shelled almonds in, wrap it into a thin slice
of bacon and pin it with a tooth-pick. Fry it in a pan. |
