50 g flour
150 ml cream
6 eggs
50 g maize flour
50 g butter
salt
Preparation:
Sift the cheese and then mix it with the yolk of the eggs, butter, cream and salt. Add the glairs, the flour sift (like a rain) and the maize flour stirring very lightly with a wooden spoon. Put the composition in a baking tin. You may serve it warm, cut square pieces with some cream above.
Egg plant salad (Salata de vinete)
4 egg plants - well broiled
200 ml sun flower oil
onion - chopped in very small pieces
salt

  Pell off the broiled egg plants, drain them and chop in small pieces with a wooden knife. Put them in a porcelaine bowl, add salt and stir very well adding the oil drop by drop. It becomes fluffy and white. Add the onion or you may serve it separate. Decorate it with tomatoes slices, green pepper and olives.
