Teresas Mexican Chicken

 1 Chicken
 4 teaspoon. minced onion
 1 Can cream of mushroom soup
 1/8 teaspoon. garlic powder
 1 can cream of chicken soup
 1/4 teaspoon black pepper
 1-4 oz. can chopped green chilies
 1/4 teaspoon tobacco sauce
 1 teaspoon chili powder
 1 Cup chicken broth
 8- 16 oz. grated cheddar cheese
 4 Cups corn chips

          Cook and debone chicken. Reserve 1 cup chicken broth. Combine soups, green chilies, spices, tobacco and chicken broth. This will be your sauce. Blend well . Preheat oven 350 degrees, cover bottom of  9"x13" pan with 1/2 of the chips. Spread half of chicken over this layer, then half of sauce, then half the grated cheese

Moms Chicken Casserole

1 Chicken (boiled)
1 Can cream of mushroom soup
1 Pound of egg noodles
1 Small box velvetta cheese
1 Cup chopped onion
2 Cups chopped celery   (optional))
Salt and pepper to taste

Boil chicken and debone:
 
      While deboning chicken, to the broth add, egg noodles, celery, onions, and two cups of water to cook noodles in. When noodles are done, add soup, 3/4 of cheese, and chicken. Keep cooking until cheese melts. Remove from heat and place in a 9" x 13" casserole dish, slice rest of cheese and lay on top. Bake in a 350 degree oven for 40 to 45 minutes. Do not cover. Serve hot.   What is neat is that you can freeze left overs in a zip lock bag and reheat and it is as good as the day you made it.

Moms Chicken Pot Pie



2 Cups cooked deboned chicken
1 Can mixed vegetables (not drained)
1 Can cream of mushroom soup
1 Can cream of celery soup (optional) use mushroom
1 Cup or so of diced cooked potatoes

Mix all ingredients together and pour into a 9" x 13" baking dish.

Top with:
    1 Cup self rising flour
    1 stick of butter (1/2 cup)
    1 Cup milk

 This mixture will be runny, but that's ok. Pour this mixture over the mixture in the pan. Bake in a 350 degree oven until golden brown. You can use other meats for different types. Like Tuna, Chip Beef, Left over Roast, Hamburger, Ham, Turkey. What ever suits your fancy.

Moms Funnel Cakes

1-1/4 Cups flour
1/4 Cup sugar
1 teaspoon baking powder
1 Cup milk
1 Egg

        Mix all the ingredients and heat oil for same as doughnuts. it is easier if you just use a fry daddy.  Pour batter through a funnel and squiggle it through a funnel (using a wooden spoon to stop the flow) squiggle it all over the top of the hot oil about one layer. When golden brown turn over and brown other side.  when golden remove it from the pan and lay on paper towel to drain. Sprinkle powdered sugar on top or other seasons of your choice.
