This page shows some of our favourite recipes. The fact that most of them seem to be variations on chocolate pudding shows you something about our tastes !! All recipes are very easy, most taking less than ten minutes to make, ten minutes to cook and ten seconds to eat !! Enjoy.

4oz Self raising flour
4oz sugar
2oz margerine
3/4oz cocoa
one egg
2 tablespoons milk or water
Mix all ingredients in a bowl (not too big).
4oz soft brown sugar
3/4oz cocoa
1/4 pint boiling water
Mix these together and pour over the first part. Cook in the microwave for 5 minutes. Fantastic with custard (especially with bananas in it).
200g (7oz) sugar
3 tbsp cornstarch
3 tbsp flour
3 tbsp cocoa powder
3 egg yolks
710ml (1 1/4 pints) milk
1 tbsp butter (or marge works fine)
1 tsp vanilla essence
120ml (4 floz) butterscotch topping (don't need this bit - it's
yummy without it)
Combine the first four ingredients in a saucepan. Stir in egg yolks and milk. bring to the boil on a medium-high heat, stirring all the time. When the mixture just comes to the boil, remove from heat and stir in butter and vanilla until the buter has melted. Pour into serving bowl.
At this point, the recipe calls for the butterscotch topping to be swirled in. We didn't have any, so we stirred chopped prunes in instead (logical eh ?). this was scrumm. We reckon that you could stir just about anything sweet in here and it would be pretty good. Can be eaten hot or cold (if you can wait that long).
The cake:
250g packet of stoned chopped dates.
1 cup of boiling water
5ml (1tsp) of bicarbonate of soda
125g of butter or margarine, (softened)
1 cup of sugar
2 eggs (beaten)
2ml of salt
1 tsp. of cinnamon
2ml of baking powder
2 cups of sifted flour
60g (100ml) of chopped pecan nuts
The syrup:
1 3/4 cups of sugar
2 tsp. of butter or margarine
1 cup of water
3/4 cup of brandy
1 tsp. of vanilla essence
Method: Soak the chopped dates in boiling water with the bicarbonate of soda for about 15 minutes until soft. Cream together the butter (margarine) and sugar until the mixture is pale and fluffy. Beat the eggs into the mixture. Sift the flour together with the dry ingredients and fold this into the creamed mixture alternately with the date mixture. Add the chopped nuts. Place into 2 greased 220mm diameter pie plates or one normal sized casserole dish and bake at 190 degrees for 20-30 minutes. (This mixture can also be made in a food processor). Once your cake is baked remove it from the oven.
Prepare your syrup by boiling the sugar, butter and water for 3-4 minutes. Remove from heat and add the brandy and vanilla essence. Prick the cake with a knife or fork all over, and pour the syrup over onto the cake. Leave to stand if possible for 2-3 days.
Serve warm or cold with whipped cream or ice cream.
2oz margerine
6oz sugar
8oz self-raising flour
one egg
6oz chopped dates (works very well with chopped prunes too)
1/2 pint hot water
1 tsp bicarbonate of soda
2 tsp vanilla essence 9optional)
Put the dates in a food processor with the water, vanilla and bicarbonate of soda. Mix well. Add the rest of the ingredients and mix again.
Cook for 40 minutes at 150 degs C. When cooked, prick with fork and pour sauce over.
Sauce :
5oz brown sugar
3oz margerine
melt in a pan and add 4 tablespoons of cream (Parev crem works fine if you want to serve it after a meat meal).
