Bixa orellana

 

Botanical Name : Bixa orellana

Plant Parts Used : seeds

The annato tree is a small, ornamental, evergreen tree of the Bixaceae family. Annato trees grow 6-9 m tall and have broad, smooth, heart-shaped leaves up to 18 cm long. The flowers are clustered, conspicuous and pink (rose-colored) to white.  The annato produces oval, burr-like capsules or pods with 5 to 100 seeds.   Seed yields can approach two metric tons per hectare.Bixin (C25H30O4), is a carotenoid that is the main coloring component of annato.  Bixin is soluble in fats and oils and the produced color is found in the fraction of the food. It has a yellow hue, very good oxidation stability, fair light stability, good heat stability but is poor at very high temperatures, such as above 125oC. The water-soluble annato is norbixin (the product resulting when bixin is saponified and the methylethyl group is split off) which is dissolved as a potassium salt in lye. It is readily soluble in aqueous alkalis with the coloring occurring in the protein and starch fraction of the food. The bixin content of the annato seeds is 2.5% to 3%
