Caesar Salad (prep time approx. 5 min.)
½ head romaine lettuce cut into ribbons
2 cups of Italian Breadcrumbs (left over from appetizer above)
1 cup fresh grated parmesan or romano cheese
6 oz. Caesar dressing (below)
Caesar dressing (prep time approx. 15 min.)
3 large eggs soft boiled 1-2 minutes from time water begins to boil
(note if you cook too quickly they may be runny if too long they will be hard boiled)
8-10oz. Olive oil
1 clove minced garlic
2 oz can anchovies (use ¾ of can)
1 oz lemon juice
Salt & pepper to taste
- Soft boil egg for 1-2 min after water reaches a boil
- Remove eggs from water, crack yoke & white into mixing bowl of food processor
- Add garlic and anchovies to egg in mixing bowl of food processor
- Start blending and add oil slowly
- Once all of the oil is added or consistency reached, add lemon juice, salt, pepper to taste.
