Tips & Hints
- Prepare ingredients ahead when possible. Prep times based on individual prep.
- Eg. Appetizer, salad & Seafood pasta all call for minced garlic (1,1 & 2 cloves). So mince 3 cloves and set aside in a bowl.
- Cook pasta in advance, rinse in cool water, lightly sprinkle with olive oil, set in fridge.
- Grate parmesan cheese for salad & seafood pasta
- Bake brownies and melt mints on top ahead of time and set aside
- While brownies are baking. Wash all of raspberries & Puree half (keep others for garnish 3-4 per serving)
- Measure out ingredients into containers that you can quickly add to recipe, combine where logical ;bullion and peppercorns in a coffee mug; breadcrumbs and butter into same bowl you’re going to use to mix them.
- Clear twice as much space as you think you might need and have your utensils and materials on hand, just like if you were going to fix a window, engine or build a bookcase.
- Just like woodworking, quality materials and tools make a difference. Cheap steaks or old produce yield the same results as D grade lumber, “old” glue or left open cans of paint. Use good quality meats and fresh produce.
