Jem's Wicked Red was inspired by that other wicked red from Pete . . . I drunk enough of it when in the USA . . . inspiration enough ! It is a medium bodied brown ale (for want of a better style) at circa 4.2% ABV. Its original recipe design was simply aimed at making it RED ! The full malt flavours dominate and excellent burnt, chocolate and smokey notes linger well after that first sip.

PenSans Wit is the closest to leaving the land of British Ales that I have come so far ! I've currently brewed it three times and was inspired by one of the world's most awesome Belgian Ales . . . Hoegaarden Wit. This beer is characterised by a pale yellow colour, a rich creamy white head and the mixed smell of orange and corriander. Noble hops are used but only really to bitter and, even then, its low at around 14 IBU. The grist is a mix of pale malt, unmalted wheat, wheat flakes and rolled oats . . . one Belgian Ale and I'm hooked ! Full process data has now been published.

PenSans Black & Roasty is the most recent additon to the PenSans Brewery's line up of beers and is (surprise surprise !) an attempt at brewing a Guinness type beer. However, as much as the name 'PenGuinness Stout' had a certain ring to it, one taste and I realised that this was something worthy of its own name ! Its a dry Irish stout brewed to an OG of 1044 with 40 units of bitterness and is made with home roasted 'roast barley'. After kegging it with a nitrogen / CO2 mixture and dispensing it through a 'sparkler tap' I can assure you that this comes out as close to the real thing as a brewer could ever need. |
