A perfect start to your dinner - cooked tofu mashed with a series of herbs, smoothed into a pate and served over crusty sourdough bread.

Ingredients: Tarragon, rosemary, thyme, garlic, tofu, olive oil, lemon juice.

Mozzarella, tomato and pesto sandwiches

A perfect choice for a lighter dinner: Mozzarella cheese, tomato, homemade pesto sauce and crushed walnuts, grilled between two slices of sourdough bread.

A classic Southern recipe, served with a nut-based butter sauce that simply has to be tasted to be believed.

A good ol' stick-to-your-ribs soup for those cold, cold Chicago nights. NOTE: Regular milk can be substituted for coconut milk.
