![]() Success with Eggplant ParmesanKITCHEN - One of Tom and Wendy's neighbors gave them a basket of vegetables from her garden. Among the vegetables were eggplants and tomatoes, so Wendy thought it would be a great opportunity to try to make eggplant parmesan again. It turned out much better than the last time she tried to make it. She cut the eggplant a lot thinner, and did a better job of browning it.
