Soy Cornbread ___ |
2/3 cup cornmeal 1/2 cup unbleached bread flour 3 tablespoons soy flour 1/3 cup sugar 1 tablespoon baking powder 1/2 teaspoon salt 3/4 cup soymilk 2 tablepoons water 1-1/2 tablespoons canola oil |
Preheat oven to 350 degrees. Oil an 8 x 8 inch baking pan with canola oil. Evenly spread out batter in baking pan. |
Makes 8 pieces (4-8 servings) |

This recipe makes a delicious heart-healthy, cholesterol-free cornbread! Excellent as a holiday treat or served with chili, soup, salad, or beans and rice. |

Add soymilk, water and canola oil. Mix to a smooth consistency. |

Bake for 10 minutes or until top is golden brown, sides begin to pull away from pan and a tooth pick inserted in center comes out clean. |

Let cool for 5 minutes. Then cut cornbread into 8 triangular pieces (make 4 cuts - first make 2 cuts to quarter bread, then make 2 more cuts from corner to corner, to cut each quarter in half) and serve. |
