German Soft Pretzels

1 package active dry yeast
1 cup warm water
2 1/2 to 3 cups all purpose flour
2 tablespoons salad oil
1 tablespoon sugar
6 tablespoons Baking soda in 6 cups water
Coarse salt

In a bowl , dissolve yeast in water. Add 1 1/2 cups of the flour, the oil, and sugar. Beat for about 3 minutes to make a smooth batter. Gradually stir in enough of the remaining flour to form a soft dough. Turn out onto a floured board and knead until smooth and satiny(about 5 minutes) adding flour as needed to prevent sticking. Place dough in a greased bowl; turn over to grease top. Cover and let rise in a warm place until double(about 1 hour).

Punch down dough, turn out onto a floured board,and divide into 12 pieces. Shape each into a smooth ball by gently kneading. Then roll each into a smooth rope about 18 inches long, and twist into a pretzel shape. Place slightly apart on a greased baking sheet turning loose ends underneath. Let rise, uncovered,until puffy(about 25 minutes)

Meanwhile, in a 3-quart stainless steel or enameled pan (not aluminum) bring soda water to a boil; adjust water to keep water boiling gently. With a slotted spatula, lower 1 pretzel at a time into pan. Let simmer for 10 seconds on each side,then lift from water,drain briefly on spatula, and return to baking sheet. Let dry briefly, then sprinkle with coarse salt and let stand,uncovered, until all have simmered.

Bake in a preheated 425 degree oven for 12 to 15 minutes or until golden brown. Transfer to racks; serve warm with butter, mustard or even cream cheese. Or let cool completely,wrap airtight,and freeze. To reheat, place frozen on ungreased baking sheets and bake in a preheated 400 degree oven for about 10 minutes or until hot. Makes 1 dozen pretzels.

Honey Whole Wheat
The Bread Lover's Bread Machine Cookbook
Makes 1-1.5 LB loaf

1/3 cup water
1/2 cup milk
1/4 cup honey
1 lg egg
1 tbsp butter, cut into pieces
2 cup bread flour
1 cup whole wheat flour
1 tbsp vital wheat gluten, + 1 tsp
2 tsp salt
* I used 1.5 tsp, 2.25 tsp SAF yeast, or 2.75 tsp bread machine yeast**
* I thought 2 tsp was way too much salt for this recipe. Cutting it to 1.5 tsp was perfect.

Place all ingredients in bread pan according to manufacturers' direction. Set crust on MED. and program for Basic cycle. Press Start. When the cycle is done, immediately remove the bread from the pan and place it on a rack. Cool to room temp before slicing.

Cornmeal Rolls

2-1/4 cups warm water (110 to 115 degrees), divided
1/3 cup cornmeal
1/4 cup sugar
3 tablespoons vegetable oil
2 teaspoons salt
2 packages (1/4 ounce each) active dry yeast
2 eggs
5 to 5-1/2 cups all-purpose flour
Melted butter or margarine
Additional cornmeal

In a saucepan, combine 1-3/4 cups water, cornmeal, sugar, oil and salt. Cook and stir over medium heat until mixture boils, about 9-11 minutes. Cool at room temperature to 120-130 degrees. Place in a mixing bowl. Dissolve yeast in remaining water; add to cornmeal mixture. Add eggs and mix well. Add enough flour to make a soft dough. Turn onto a floured board; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45-60 minutes. Punch dough down. Shape into 24 balls. Place on greased baking sheets; brush with butter and sprinkle with cornmeal. Let rise, uncovered, until doubled, about 30 minutes. Bake at 375 degrees for 18-20 minutes or until golden brown. Immediately remove from pan; serve warm. Yield: 2 dozen.

Soft Pretzels

1 cup water

3 tbsp kosher (pickling) salt
Melted butter, kosher salt and poppy seeds (optional), to top with.

Layer ingredients into machine as listed above and run on dough setting. Once finished, let dough stand for 20-30 minutes. Break dough into 8 even pieces and roll out to 1/2 inch diameter and shape into pretzels.

Boil 8 cups water with 3 Tbl. of kosher salt. Immerse pretzels n boiling water for 1 minute and place on greased bake pan. Brush with melted butter and top with kosher salt and poppy seeds.

Bake in 475 degree oven for approx. 15 minutes till pretzels are golden brown. Loaf Size: 2

2 Cups Bread Flour 4 Cups
1/2 Tbsp Orange Peel 1 Tbsp
1 1/2 Tbsp Dry Milk 3 Tbsp
2 tsp Sugar 4 tsp
1/2 tsp Salt 1 tsp
1 tsp Yeast (fast rise) 2 tsp
- -or- -
2 tsp Yeast (active dry) 4 tsp
Remove dough from the machine after the dough or manual cycle is completed. Then remove and follow the process steps below.
Coating
1/2 cup Butter 3/4 cup
1 1/2 tbsp Orange Rind 3 tbsp
1/2 cup Sugar 1 cup
