Creamy Pototoe Soup

2 chicken boullion cubes
2 cups boiling water
4 or 6 cups cubed peeled potatoes
1 cup diced carrots
1/2 cup chopped onion
1 tbl parsley
1/4 cup margarine
1/4 cup flour
1 quart of milk
salt and pepper to taste
1 cup diced ham
1/4 lb. velveta cheese

Dissolve boullion in boiling water.
Combine potatoes and vegtables in large saucepan
bring to a boil, reduce heat and cover.
Simmer until vegetables are done, (about 20 minutes).

Melt margine in 4 qt or big kettle.
Blend flour and stir mixture till smooth.
Gradually add 1 cup of milk,
then add remaining 3 cups of milk,
stirring constantly until thick.
Add all other indregrients, heat.
You can add lemon pepper to taste.
