Finder doesn't empty trash right away
Because of the slow performance of OS X, the Finder may not empty
the trash right away... sometimes it may take as long as 60 seconds.
This can be a problem when trashing items on a mounted disk. You
may eject the disk, thinking that you've finished emptying the trash,
but the Finder will then ask you to put the disk back in, so that
it can empty its trash.
No solution found.
Update (Feb. 10, 05): Since upgrading to a dual-2.5
MHz with 2 GB of RAM, this problem has gone away.
Typing is slow
Entering text into some apps will sometimes be very slow, where
the letters being displayed on screen will be lagging behind the
text you've typed. The behaviour is inconsistent and random. This
is also probably due to OS X's slow performance.
I can only presume that this problem may go away
with a faster dual-processor Mac. Update: It
hasn't gone away since upgrading.
Update (Feb. 10, 05): Since upgrading to a dual-2.5

Burn-and-eject doesn't work
In OS 9, if you selected an unburned CD's icon on the desktop and
dragged it to the trash, it would burn the disk and eject it as
expected. OS X keeps it on the desktop.
Probably a bug. Let's hope Apple fixes it in a future
release.
Crashes after sleeping
If you leave the system idle, and the Energy Saver puts the computer
to sleep, you may be unable to wake it.
Probably a bug. I've been able to fix it on my Mac
by changing the Energy Saver settings to never put the hard drive
to sleep, only the monitor.
