( Lecturer- Department of Food and Nutrition , R.V.S
College of Arts and Science Sulur Coimbatore).
India is
the largest producer of coconut with a production of
14925 million nuts annually . About 90% of the
production comes from southern states, out of which
the contribution of Kerala is 45% followed by Tamil
Nadu 28% and Karnataka with 11% . Coconut finds a
wide usage in the preparation of beverages ,
desserts and main dishes. At the all India level ,
the consumption of coconut as tender nut is less
than 10% of the total production .Even though more
than 25% of coconut production is consumed as
tender nut in in States like Karnataka , Andhra
Pradesh and West Bengal, tender nut consumption is
negligible in Kerala. So effort was made to develop
products from tender nuts in order to popularize
tender coconut in Kerala.
Indians
are known to have a sweet tooth. The country has a
long history of producing a wide range of
traditional sweetmeats. Desserts products due
to their sweet taste and flavour enjoy a wide
acceptance throughout the world So attempts are
made to utilize the unexploited tender coconuts by
incorporating in desserts like Ice-cream ,
pudding ,Buko in syrup, Kheer and halwa, in order to
popularize tender coconuts in Kerala.
Objectives of the Study includes:-

Effective utilization of tender nut Kernal ,which
is often left unutlised /unexploited.

Formulate variety products from locally available
material ( Tender Coconuts) so even rural
population will be benefited.
- To
uplift the economic condition of the farmers who
mainly depend on coconut industry.
- To
popularize new products from tender coconuts
through marketing , Internet etc.
