 Coconut is consumed (domestic) in the three major forms in the origins i.e. as a natural milk extracted from the kernel of the fresh coconut for preparation of confection and con-confection, in the form of oil for both edible and non edible uses and the young coconut as natural beverages . Coconut oil which consists of 48.2% of lauric acid has a special place in the spectrum of vegetable oils. Recent research’s in health indicate a far greater nutritional and medicinal value to coconut oil as a source of medium chain triglycerides and monoglycerides than in presently known in presently known in popular market even in developed countries . Due to its intrinsic value , Bruce Fife N.D in U.S.A , the author of “ The Miracle of Coconut Oil” wrote “ If there was an oil that you could use for your daily cooking needs, that helped protect you from heart disease, cancer and other degenerative conditions, improved your digestion , strengthened your immune system, and helped you lose excess weight , would you be interested? That is what coconut oil can do for you. The oil from coconut is unique and provides many health benefits obtainable from no other source”. Coconut oil has been called the healthiest dietary oil on earth.
