Tasty Bar Cookies
Buttery Lemon Bars

1 cup (1/2 lb.) butter or margarine, softened
1/2 cup powdered sugar
2 1/3 cups all-purpose flour
4 eggs
2 cups granulated sugar
1 teaspoon grated lemon peel
6 tablespoons lemon juice
1 teaspoon baking powder
Powdered sugar

  In a large bowl, beat butter and the 1/2 cup powdered sugar until creamy; beat in 2 cups of the flour, blending thoroughly. Spread mixture evenly over bottom of a well-greased 9 by 13-inch baking pan. Bake in 350 F. oven for 20 minutes.
  Meanwhile, in a small bowl of mixer, beat eggs until light. Gradually add granulated sugar, beating until mixture is thick and lemon-colored. Add lemon peel, lemon juice, remaining 1/3 cup flour, and baking powder; beat until smooth and well combined.
  Pour lemon mixture over baked crust and return to oven; bake for 15 minutes or until topping is pale golden. Place on a rack to cool; while still warm, sift powdered sugar lightly over top. To serve, cut into bars about 2 1/4 by 2 1/2 inches. Store airtight. Makes about 20.

Sometimes chewy, sometimes cakey, and sometimes crisp and crunchy, bar cookies are always popular - and because they're quick to prepare, they're often favorites with the cook, too. The key to their speedy preparation is the fact that they're spread in a pan and baked all at once, rather than being individually shaped. This also makes them good candidates for taking to picnics and parties - you can wrap and carry them easily, right in their baking pans. Have fun!
These luscious bars will remind you of lemon meringue pie - minus the meringue topping, and with a cookie crust instead of pie pastry.
** When using a recipe card, slip the card between the tines of a fork and stand the fork in a glass. The card will be held at just the right angle for reading and will be safe from spills.

** If a dish turns out too spicy, add sugar, 1 tablespoon at a time. Be sure to taste after each addition! It will cut the 'fire'.

Carob Chip Bars
These moist (and healthy!) bars make perfect easy afternoon snacks.

2 1/4 cups whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon salt
1 cup soft butter
3/4 cup sucanot (or white sugar)
3/4 cup brown sugar
1 teaspoon vanilla
2 eggs
1 cup carob chips

Spread cookie dough onto a greased jellyroll pan. Bake at 350 for 10 to 20 minutes.
