Brazilian Hearts of Palm Salad

Description:
Heart of palm, the stripped white heart, core, or "bud" of a young palm or palmetto tree, is a popular food in Florida, West Indies, and South Africa. The hearts have a bland and delicate flavor and taste something like chestnuts.Raw hearts of palm have an appealing crisp and mild flavor reminiscent of asparagus. Canned hearts do not have the crispness but retain the delicacy.( Give it a try, Dare to be different !)

Ingredients:
1 can(14 ounces) hearts of palm, drained and cut into 1/4-inch slices
1 medium-sized ripe avacado, peeled and diced
1 small head leafy lettuce, washed, dried, torn into bite-size pieces and chilled
1/3 cup extra virgin olive oil
2-3 teaspoons fresh lemon juice
1/2 teaspoon dried basil, fresh if available
Salt, pepper to taste
1 large tomato, peeled and cut into wedges

Directions:
Combine hearts of palm, avacado, and lettuce in a salad bowl. Mix oil, lemon juice, basil, salt and pepper; pour over salad; toss. Serve at once garnished with tomatoes.

Number Of Servings:Serves 4 to 6
Preparation Time:10-15 minutes



Michael Spudich - Sep 12, 2002 New Zealand Kiwi Fruit Salad

Description:
Kiwi fruit, also known as Chinese gooseberry, was discovered in China, but now New Zealand grows and exports it. The following salad from New Zealand is called Kiwi Fruit Jewel Salad.

Ingredients:
3 cups fresh pineapple chunks
2 medium-sized bananas, peeled and sliced
2 naval oranges, peeled, separated into segments, and membranes removed
Juice of 2 lemons
1 cup sliced fresh strawberries
3 kiwi fruit, cleaned and sliced
1 tablespoon honey

Directions:
Put pineapples, bananas, and oranges in a bowl. Squeeze lemon juice over them. Add strawberries and kiwi fruit and mix well. Boil honey with 3/4 cup water;cool; pour over salad; mix well. Refrigerate 1 hour to blend flavors.

Number Of Servings:Serves 6 to 8

Preparation Time:Depends on how quick you slice and dice?

Tasty Oriental Slaw

Description:
Quick, easy, tasty.... The perfect recipe for me :)
Ingredients:
1 bag cole slaw mix
2 tsp. onion powder
1C sunflower seeds
1C sliced almonds
3/4 C vegetable oil
2/3 C sugar (can't have sugar that's ok use a sub.)
1/3 C vinegar
2 pkgs. chicken flavored Ramen Noodles

Directions:
Mix together slaw, onion powder, sunflower seeds, almonds and noodles (break noodles first) Set aside.
In another bowl mix veg. oil, sugar, vinegar and Ramen Noodle flavoring pkg.
Within 30 minutes of serving time, mix all ingredients together and enjoy!

Preparation Time:10 mins or less
