Homemade Soups - January 2003 Contest

Potato Soup

Description:
Being That I'm Irish (as all of my ancesters already know this recipe i just thought i'd share) My families Recipe For Potato Soup ;^P

Ingredients:
5 pounds of potatos (the kind that has that brown dust on them lol)
1 Cup Of Milk(regular or low fat)
3 stix of butter (yup this is fattening)
4 medium sized onions
2 stix of celery (small stix)
Salt N Pepper
You can also add scallions if you'd like...
1 Loaf Of Seeded Italian Bread N One Loaf W/O Seeds

Directions:
Peel Potatos and wash well
Cut into 1/4 pieces
add onions (cut onions very small, almost diced)
fill 4 quart pot with water,
add Potatos N Onions To Pot and just let it boil (you can add the celery and scallions at the same time as Potatos N Onions)...
When the water looks dirty (lol) from the Potatos And The Potatos are VERY WELL cooked (the onions should almost be boiled away at this point)
Add Butter To The Pot And Then Add The Milk Slowely,Stirring The Butter N Milk Into Pot.
After Butter Is Melted Then TURN OFF THE FIRE UNDER POT...
Let Soup Stand For About 15 minutes to a 1/2 Hour And Your IRISH POTATO SOUP IS READY :)

Then Cut The Italian Bread And DUNK Into Soup LOL MMMMMM It's Soooooo Goooooood :P

Number Of Servings:App. 6 servings if to much is left over you can freeze and save for another time
Preparation Time:about 15 minutes PREPARATION time,Cooking time about 45 mins.

Fruit of the Spirit Soup Description:
a jar of beans for gift giving. Very good soup

Ingredients:
Lima Beans for Love
Split Peas for Joy
Black Beans for Peace
Red Beans for Patience
Pinto Beans for Kindness
Navy Beans for Goodness
Lentils for Gentleness
Black-eyed peas for Meekness
Kidney Beans for Long-suffering

On the tag attached to the jar is the following: On a dark rainy day do you ever become depressed? Well, most folks do. You don't want to do anything but get in bed and cover your head. Well, I have a suggestion for you. Let's make "Fruit of the Spirit Soup!" "But the fruit of the spirit is love, joy, peace, long-suffering, gentleness, goodness, meekness, temperance." Galatians 5:22,23

DIRECTIONS: Soak beans overnight. Cook as usual. Add an onion, a little garlic and your favorite seasonings.
