First from Kathy Dauzet a muffin recipe to go with the soups:
Golden Sweet Corn Muffins - Kathy Dauzet
1 cup flour
1/2 cup cornmeal
1/4 cup sugar
1 Tbsp. baking powder
1 cup fresh corn ( whole )
2 eggs
1/2 cup milk
1/2 cup butter melted or oleo
mix and bake at 400 degrees for 15-25 minutes
or 35 minutes in square pan.

Chicken Noodle Soup - Kathy Dauzet
This soup is low in calories and salt.
2 pounds boneless, skinless chicken breast
6 carrots (chopped)
1 can (16-oz) tomatoes (chopped)
3 cups fat-free chicken broth
1 teaspoon rosemary
1 teaspoon thyme
1 onion, chopped
4 celery ribs (chopped)
5 cups water
3-Tablespoons lemon juice
1 Tablespoon minced parsley (or fresh parsley)
1-1/2 teaspoons lemon pepper
1 package (12-oz) soup noodles
Combine all ingredients, except noodles, in slow cooker.
Cover and cook on low to medium for 8 hours.
Increase heat to high and add noodles, stirring to blend.
Cover and cook for 30 minutes or until noodles are tender.
Makes 10 servings.
Yankee Bean Soup - Kathy Dauzet
If you don't have a ham bone, you can use either
2 pounds of ham hocks or 2 cups chopped ham.
uuummm....good!
1 ham bone
1 pound pkg. dry Northern white beans
2 large onions (chopped)
2 cans stewed tomatoes
1 teaspoon of marjoram
2 teaspoons cloves
1/2 head white cabbage (medium size head)
3 large potatoes (cut into 1-inch cubes)
5 carrots (sliced)
Salt & Pepper
Soak the beans according to package directions.
Put 8 quarts of water into a very large soup pot.
Place ham bone in water, bring to a boil.
Add soaked beans (which have been drained), onions,
tomatoes, spices, cabbage and salt and pepper.
Simmer for several hours until the beans are tender.
Turn burner up - add the potatoes and carrots, and cook
until they are tender. (About 30 to 40 minutes.)
Serve with warm Cuban bread.
My Personal ~ Today's Fast Version of Grandma's Soup - Gloria Ranes
1 pound of ground beef (ground round saves fat)
1 can of kernel corn (drained & rinse off preservatives)
1 can green beans (drained & rinse off preservatives)
1 bag of frozen okra (fresh frozen if possible :)
2 cans of tomatoes (fresh frozen if possible :)
1 bag of crowder peas (fresh frozen if possible :)
1 T Salt
1 T Black Pepper
1 T Ms. Dash (in place of salt & pepper if desired)
Optional:
any other vegetable you like on hand.
Cook on low heat or in crockpot all day
Serving Ideas:
Fresh cornbread ((((((()))))).
Stephanie's Super Chowder - Stephanie Marottek
2 potatoes-cubed and boiled. Reserve 1 c. potato water
1 c. chopped onions sauted in 3 T. butter till tender, not brown
3 T. Flour
dash of pepper to taste
3 c. milk
2 c. chopped up ham
2 c. shredded cheddar cheese
Start with onions and blend in flour and pepper. Add Milk and potato water. Cook and stir until mixture thickens and bubbles. Add potatoes, ham and cheese. Stir to melt cheese.
Serve with fresh bread and milk.

Stephanie's Grandma Amanda's Green Bean Soup - Stephanie Marottek
Ham Bone with ham
1 1/2 quarts green beans
4 potatoes
1tsp each of parsley and summer savory
1 small onion minced
1 c. cream
Cook ham bone with with meat and broth cook beans, potatoes, parsley, summer savory and onion. When soup is done, add cream and serve.
Add more beans and potatoes is a larger amount of soup is needed. I usually use leftover ham and baked potatoes, so all that is needed is to heat up everything, and add a couple cans of beans
