Procedure:
Rinse the chicken, cut into pieces, blanch in boiling water. Rinse to remove scum and drain; rinse Qi Zi and drain.
Combine chicken, ginseng, Qi Zi and wine in a clean porcelain container with 5 cups of water. Rest the container on an inverted bowl in a wok. Pour in water to cover half of the container. Cover wok and double-boil over medium heat for 40 minutes or until chicken is tender. Add salt to taste, remove and serve.
