"Ginseng Chicken Soup"

Ingredients:
  • 2 chicken thighs
  • 38 g. ginseng fine roots
  • 2 tbsps. Qi Zi
  • 1/2 cup rice wine
  • salt to taste

[Ginseng Chicken Soup]Reward yourself with this invigorating dish that will definitely boost up that tiring body.

Procedure:
  1. Rinse the chicken, cut into pieces, blanch in boiling water. Rinse to remove scum and drain; rinse Qi Zi and drain.

  2. Combine chicken, ginseng, Qi Zi and wine in a clean porcelain container with 5 cups of water. Rest the container on an inverted bowl in a wok. Pour in water to cover half of the container. Cover wok and double-boil over medium heat for 40 minutes or until chicken is tender. Add salt to taste, remove and serve.
