"Ying Yang Vegetable Spring Rolls"

Ingredients:
  • 3 pcs. nori sheets
  • 3 pieces poh piah skin
  • 1/2 radish
  • 1/2 carrot
  • 1 cucumber
  • 1/2 cup minced toasted groundnuts
  • 3 tbsps. fine sugar
Seasoning:
  • 3 tbsps. vinegar or lemon juice
  • 3 tbsps. fine sugar

[Ying Yang Vegetable Spring Rolls]Easy, simple but tasty "Chinese" treat suited for any occasion. A dish that deserves its place on the dining table.

Procedure:
  1. Peel, wash and shred radish and carrot; wash and shred cucumber finely. Marinade vegetables with salt and set aside.

  2. Combine minced toasted groundnuts with fine sugar and set aside. Squeeze dry radish, carrot and cucumber shreds.

  3. Add camote, potatoes and cook for 5 minutes. Then mix in rest of vegetables.

  4. Place each nori sheet flat on a table. Spread groundnut and sugar mixture along one side. Spread sufficient vegetables on top, and roll up firmly to form a cylinder. Fold in both ends. Repeat the process also with poh piah skins.

  5. Cut into sections, arrange on a plate and serve.
