Two different levels of detail in roughed out heads.

The choice is yours, period!

The more detailed head has a narrowed upper head, cheeks and an eye trough.

 
 
 The finished detailed gunning head. This is still a rough bird with only minimal sanding done. Major tool marks are left.
 Now apply a good couple of coats of your favorite sealer/finish to ALL the wood parts of the bird.  
 

 Flatten the area at the freon of the bird to receive the head. Make it just flat enough to seat the head. Mark the location of the center of the neck.

Although, not shown a good rule of thumb is to locate the breast between the nostril and the tip of bill if viewed from above.

Transfer the location of the head to the bottom and drill a hole big enough to place the lag through. Only drill deep enough to go through the wood. DO NOT drill deep into the foam as this will not allow for good attachment. Screw the lag through as square as possible.
