Do you work long hours and have an even longer commute? Do you get home at 8 or 9PM, and have no time to go to the grocery store and cook a meal from scratch?
Freezing food is an excellent time-management technique for the busy person on the go. The great thing about this whole concept is that it can work for anyone--not just large families--and you do not have to prepare 30 days worth of meals at once. A few smaller, shorter cooking sessions are very doable.
It makes perfect sense to devote a little extra time on the weekend building up a bulk of meals in the freezer.

CRISPY OVEN-FRIED CHICKEN
- 2 to 2 1/2 lbs broiler-fryer, cut up
- 3/4 cup dairy sour cream
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon celery salt
- 1 teaspoon salt
- 1/8 teaspoon paprika
- 2 cloves garlic, finely chopped
- 1 cup packaged dry bread crumbs
Directions
Pre-heat oven to 350F Grease a 13-by-9-by 2-inch baking dish. Wipe chicken with damp paper towels.
In medium bowl, combine sour cream with lemon juice, Worcestershire, celery salt, salt, pepper, paprika, and garlic; Mix well.
Dip chicken into sour-cream mixture; then roll in bread crumbs, coating completely.
Arrange chicken pieces in baking dish, bake, uncovered, 45 to 60 minutes, or until chicken is tender and nicely browned.
Let chicken cool completely. Wrap in foil individually or in a single layer; label, and freeze.
To reheat chicken: Preheat oven to 450F Place wrapped frozen chicken in oven; bake 45 minutes. (if chicken is individually wrapped, bake 30 minutes)
Uncover chicken; bake 10 minutes longer to crisp.

FREEZING SOUP
Make a big pot of soup and put it into containers and freeze it. When you don't feel like cooking much just put a container of the soup in a pot, heat it up and boil soup noodles or rice into it, along with any leftovers you may have.
Quick, easy and good.
