.JEWISH APPLE CAKE
In first bowl:
Mix & set aside:
4-5 apples, peeled & thinly sliced
5 Tblsp. sugar
1 Tblsp. cinnamon
In second bowl:
Mix the following well with electric mixer:
3 1/2 c. flour
1 cup vegetable oil
1/2 cup orange juice
4 eggs
2 cups sugar
3 tsp. baking powder
1 tsp. salt
1tsp. vanilla
Grease a bundt or angel food cake pan (no flour).
Layer batter mixture, than apple mixture, repeat
until bowls are empty.
Bake at 350o for 1 hour. Test for doneness with
toothpick. Cool 25 minutes. Invert onto
a serving plate.
~~~~~~~~~~ SALADS ~~~~~~~~~~
Cook potatoes in skin. Peel than dice.
6 potatoes
In skillet cook until crisp:
1/2 lb. bacon
Drain & crumble. Reserve 4 Tblsp.
of fat in skillet add:
1/2 cup chopped onion
1/4 cup chopped celery
Cook until tender. Blend in
2 Tblsp. flour
2 Tblsp. sugar
1 1/2 tsp. salt
1 tsp. celery seed
1/8 tsp. pepper
Once blended add:
1/2 cup cidar vinegar
1 cup water
Cook & stir until bubbly & thick. Stir in
bacon & potates, toss lightly. Place in
casserole dish & bake 350o
for 20 mintues.
