Lemon Lamb Shanks

 4  lamb shanks or lamb chops
 2 - 3 Tblsp. of olive oil
Fry meat in oil on medium-high heat until done.
 Reduce heat and simmer 3 - 5 minutes in:

The juice of 2 lemons
1 tsp. garlic powder, not garlic salt
1 tsp. oregano
1/4 tsp. pepper
Goes great with rice, wild rice or mashed potatoes

Stuffed Flounder Athenian

 Preheat oven to 375o.  In a med. bowl
combine & mix well:

1 cup cooked spinach, drained
2 oz. feta cheese, crumbled
2 tsp. lemon juice
1/4 tsp. dillweed
1/4 tsp. pepper.
Spoon half of cheese mixture onto the
center of each fillet:

2 flounder fillets (4 oz. each)
Roll fish lengthwise to enclose, transfer fish
rolls, seam-side down, to 8x8x2 in.
baking dish.
In small bowl, combine:

1/4 cup water
2T dry white wine
1T fresh parsley, chopped
1/8 tsp. paprika
2 tsp. lemon juice
Pour over fillets and bake until fish
flakes easily when tested with
a fork; about 15-20 minutes.
