"Laing (Taro Leaves in Coconut Milk)"

Ingredients:
  • 1/3 kilo shrimps, chopped finely
  • 2 young coconut, grated
  • 1 onion, chopped
  • 7 pcs. gabi (taro) leaves
  • 3/4 cup thin coconut milk
  • 3/4 cup thick coconut milk
  • 2 pcs. siling labuyo (habañero chili pepper)

[Laing (Taro Leaves in Coconut Milk)]A very healthy and spicy dish from the province of Bicol. This dish has a very distinctive taste because of the use of gabi leaves.

Procedure:
  1. Chop the shrimps, coconut meat and onion and combine. Add salt and wrap portions of the mixture in gabi (taro) leaves.

  2. Arrange the packets in the pan and pour the thin coconut milk over them. Cover and simmer over low flame for 15 minutes, shaking the pan once in a while to avoid burning.

  3. When almost done, add the thick coconut milk and siling labuyo (habañero chili pepper). Continue cooking until sauce is thick.
