"Pork Adobo"

Ingredients:
  • 1 cup native vinegar (paumbong or coconut vinegar)
  • 1 head garlic, crushed
  • 1/2 tsp. black pepper
  • 1 bay leaf
  • 2 tbsps. rock salt
  • 1-4 tbsps. soy sauce
  • 1 kilo pork, cut into 1" x 1" pcs.
  • 100 g. pork liver, cut into 1" x 1" pcs.
  • 1 1/2 cup water

[Pork Adobo]Serve our version of the all-time favorite Filipino dish. This is a classic Filipino dish that cannot be missed out on the dining table.

Procedure:
  1. In a saucepan, combine vinegar, garlic, pepper, bay leaf, rock salt, and soy sauce. Put pork and liver. Let soak for 20-30 minutes. Add water and simmer uncovered until tender.

  2. Strain sauce. Set aside. Chop liver finely. Combine with sauce. Set aside.

  3. Brown garlic, and pork in cooking oil. Return everything to saucepan, cover and simmer until sauce thickens. Dish up and serve.
