Immerse egg in a glassful of water. If the egg is fresh it should stay at the bottom of the glass horizontally. An old stale egg would float to the surface of the water. If this happens, dispose of the egg.

The best time to separate the egg whites from the yolk is when they are cold because the low temperature makes the yolk firm thus, making it easy to separate the whites from the yolk.

Crack egg into bowl, then lift it up and cup it in your hand. Let the egg white drip through your fingers.
