I love the aroma and taste of thyme! Use the tiny leaves to flavour soups and stews, and spaghetti sauce. It is especially wonderful in fish dishes such as baked fish, chowder, seafood casserole, also in meat loaf, hamburgers, turkey and chicken stuffing, and most vegetables. Thyme has a powerful taste, so it is best to add it lightly.
Try a few different varieties if you grow your own. There is lemon thyme, which enhances fish wonderfully. Other unusual varities include nutmeg thyme, oregano thyme, orange balsam thyme and caraway thyme, all of which impart a scent that their names imply.
Caution: Thyme leaves and flowers contain an oil called thymol, which has been used commercially in many cosmetic and pharmaceutical products. However, pure thymol has been known to cause negative reactions both internally and externally, so caution should be taken when trying home remedies.
