to be vegetarian. Majority of India believe in vegetarian food. Same is
true for kumauni people. So the dishes which are very special or very
specific to that region are all vegetarian . We can divide the cuisines
or dishes in three parts. 1. Sweet Dishes: These are the dishes, which are sweet in nature and part of many festivals. Generally these dishes are used as refreshments. It is believed that In earlier days there was poverty in that region. So at the time it was not possible for people to have the special food as and when they want. So it was formulated that they will prepare the special food in festivals only. So that they can enjoy the food , in the name of festival. There is one more concept also. Since these foods are rich in content and not good for health, if consumed daily. So people prepare these foods only in festivals. Whatever may the concept behind it; the fact is that some of those dishes are part of every festival. The dishes come in that category are Singal , Pua , Sai or Saai , Khajoorey , Rot , Gulgula (popular in Garwal) , Jhangora ki kheer . These are the dishes which are prepared at home but some very special sweets are also there . Those are Bal mithai , Chocolate , Singoree 2. Salted Dishes: Most of the dishes come in this category. This category may be divided into subcategory depending upon the type of dish. Like 1.Dals. 2.Rereshement 3. Vegetables (Sabjee) 4. Appetizer The dishes comes in this category are Bhatt Ka Churkanee , Bhatt Ka Zola , Bhatt key Dubkey , Ghaut kee dal , Ghaut key dubkey ,Rus ya thatwanee , Kapa , Shishoon Ka Sag , Bhang ki khataee , Sana hua nibu, Raita ,Bada , Aloo ya Gaderee key gutkey , Dadim (Anar) ki chatnee 3. Bread or Rotee and others: There are some Rotee also which are very specific to that region . These are madua ki rotee , Lesu ki rotee , Chhoi Rotee . Apart from that we can have Madeerey ka bhaat , Badee etc .
