1) Singal /Pua

Ingrediants :

Soojee ya Chawal ka aata ,Ghee,Cheenee,Dahee,Meethee saunf,ilaichee,Oil or refind Oil

Method :
 
Soojee ya chawal key aatey main thoda moyan ( ghee ) daal kar use achchhe se mix kar lo. Phir usame thoda dahee ( khayal rahe ki dahi jyada khatta na ho ) daalkar  paste sa bana lo. Usme cheenee ,meethi sauf aur ilaichee peeskar daal do aur paste ko thodee der ke liye aise hee rahane do jisse  sujee ke sath baki cheejen achchhe se eksaar ho jayen.
 
Phir kadhai mai ghee daal kar agar pue banane hain  to gol gol tal kar nikal lo(sunhara bhoora rang aane par) . Agar sihal banane hain to hath main paste lekar jalebee kee tarah fere wala aakar bana lo fir tal kar nikal lo.      
 
2) Bada

Ingrediants :

Urad kee daal (chhilkey walee) also called mas in kumauni , Oil ,Namak,Haldee,Masala

Method :
Raat ko urad kee daal ( chhilke walee ) paanee me bhiga lijiye. Subaha achchhe se dho kar bahut bareek pees kar paste banalo (yahan par rat aur subah isliye kaha hai ki isse aapko maloom pade ki kitne samay tak dal ko bheegna hai). ab peeskar ise feto. Mixture ka pata chalne ke liye ek paani se bhari catori me thoda sa paste daloge to woh usme  tairne lagega. Phir isame namak, mirch , masala(according to your taste) etc dal kar bade ke aakar ka bana kar fry kar lo.


3) Khajoorey (sakarparey) aur rot

Ingredients :

Aata , Ghee ,Doodh,Cheenee, Saunf,Oil

Method :
Aatey main moyan (Ghee) dain . Fir ismey cheene,saunf mila kar doodh sey goonthey . Aata thoda sakth hona chahiye.Kadahee main ghee dal kar garam karo. Khajoorey key liye ek badee rotee bana kar uskey chhotey chhotey dimaond key aakar key tukdey kato.aur unko tal lo. Rot key liye : Normal aakar kee motee rotee bana kar ussey tal lo. Ho gaya..

Regarding Singal/Pua  prepration : I think sometimes banana (kela) is also included into this .... pua is also made salted . Specially on the day of Govardhana . It is called maas-chawal ka pua and its my fav..any taker of this recipe....
 
Regarding Bada : There is one concept that there should be hole between bada ..like polo-mint .This is termed as shubh as with same stuff bada is also made like pakodee ..but only in some not-shubh occassions like Shradha ...
 
Regarding Rot :..Generally the word Rot is combined with other word to become ..rot-bhet (In my childhood I used to confuse it with Roadways) ...actually it is deformed version of Rot Bhent (Offering of rot). The rot is prepared as an offering to God (prasad)...and some time Swastik sign is also made over it using nails at a time of Rotee preparation..
