Gahat Ka faana
Ingredients: gahat ki daal, ek pahadi nimboo, hara dhaniya, dhaniya powder, haldi powder, garam masala powder, lal mirch powder, salt, refined or mustard oil. For tudka: ghee, jamboo, heeng Method: gahat ki daal leke pehle usko kadhai main bhoonege (without oil). jab vo acchi tarah se bhoon jaye to usko mixi ya sil main pees lenge (without water), lekin ya dhyan rahe ki gahat ko humne thoda mota-mota peesna hai. fir hum kadhai main thoda sa tel lenge aur peesi hui gahat ki daal ko bahut thode se tel main khoob bhoon lenge. ab jab vo acchi tarah se bhun jayegi to usmain hum dheere-dheere boiled water milate rahenge, ye dhyan rahe ki thunda paani nahi milana hai. fir usmain namak, dhaniya, haldi dalenge aur usko pakate rahenge aur kurchi se hilate bhi rahenge nahi to usmain 'tala' bhi lag sakta hai. final touch dene ke liye usmain hum 'pahadi nimboo' nichod ke dalenge. agar pahadi nimboo available nahi hai to 'kaagzi nimboo chalega'. tudka lagane ke liye hum ghee ko garam karke usmain jamboo & heeng dalenge aur garnishing ke liye bareek kata hua hara dhaniya dalenge. serve garam-garam 'gahat ka faana' with bhaat. |
