"Leche Flan"

Ingredients:
  • 2 cups condensed milk
  • 8 egg yolks
  • 1 tsp. vanilla
  • 2 cups sugar
  • 1/2 cup hot water
  • 1 tsp. lemon

[Leche Flan]Savor the creaminess and taste of this all-time favorite Filipino dessert.

Procedure:
  1. Prepare caramel syrup: Melt sugar in heavy metal container over low flame. As soon as sugar is light brown, add 1/2 cup hot water to dissolve caramelized sugar and form syrup. Set aside.

  2. Scald the milk in double-boiler for 15 minutes. Beat egg yolks. Add the sugar, milk, and flavoring. Pour 1/2 cup of caramel syrup (or just enough to cover bottom of mold) into 1 quart mold and distribute evenly on the bottom of mold. Pour in the mixture into mold.

  3. Preheat oven to 325 degrees Fahrenheit. Place the mold in a large pan half-filled with water. Steam or bake for about 1 hour or until mixture becomes firm. Cool before removing mold.
