"Peeling the Shell Off an Egg"

peel the shell off an egg, first crack the eggshell. Then immerse
the egg in a cup of hot water and let it stay for a minute or

Savor the creaminess and taste of this all-time favorite Filipino dessert.
Procedure:
Prepare caramel syrup: Melt sugar in heavy metal container over low flame. As soon as sugar is light brown, add 1/2 cup hot water to dissolve caramelized sugar and form syrup. Set aside.
Scald the milk in double-boiler for 15 minutes. Beat egg yolks. Add the sugar, milk, and flavoring. Pour 1/2 cup of caramel syrup (or just enough to cover bottom of mold) into 1 quart mold and distribute evenly on the bottom of mold. Pour in the mixture into mold.
Preheat oven to 325 degrees Fahrenheit. Place the mold in a large pan half-filled with water. Steam or bake for about 1 hour or until mixture becomes firm. Cool before removing mold.
