SPINACH SALAD Healthy Recipe -- Spinach Salad with Fruit and Honey If you're looking for a new salad idea, skip the fattening dressings and try this change of pace instead -- apples and grapes tossed with spinach and topped with a creamy honey-lime dressing. For variety, substitute peaches and kiwifruit for the other fruit. We don't always keep these ingredients on hand - so you'll probably have to plan ahead. Ingredients: 4 cups torn spinach; 1 medium apple or pear, cored and coarsely chopped; 1/4 cup seedless red grapes, halved; 1/4 cup sliced celery; 1/4 cup nonfat plain yogurt; 1 tbsp honey; 1/4 tsp grated lime peel. In a salad bowl, combine the spinach, apples or pears, grapes and celery; set aside. In a small bowl, stir together the yogurt, honey and lime peel. Drizzle over the spinach mixture. Gently toss until lightly coated. Prep. time: 10 min.; Makes 4 servings.
