Herbed Salmon Filets in Foil

These packets make entertaining very easy because they can be prepared entirely in advance - first thing in the morning, if you like - and kept in the refrigerator until cooking time. Just as important, they take only 12 minutes to cook.

 

6 salmon filets (6 oz. each)
6 thin lemon slices
3 cups whole wheat croutons
1 cup Newman's Own Caesar Salad Dressing
1 tablespoon shopped fresh thyme
1/4 cup chopped garlic
salt and pepper to taste

Preparation:
Preheat the oven to 450°. Have 6 pieces of aluminum foil, each cut to enclose one fillet.

Place a fillet in the middle of the foil. Season with salt and pepper, and put a lemon slice on top. Pour 2-1/2 tablespoons of dressing over each fillet. Sprinkle with the garlic and thyme, and scatter 1/2 cup of croutons over each fillet. Enclose in the foil, sealing it airtight and leaving a little space at the top for the packet to expand.

Bake the packages on the rack for 12 minutes. The packets will puff up slightly. Transfer the packages to dinner plates. Be sure to open them carefully because there is a buildup of steam inside.
